Chocolate Masala Chai Cake
The base for this luscious Chai-spiced dark chocolate cake was adapted from Deb Perelman at www.SmittenKitchen.com to include all the warming flavors of your favorite chai latte.
Makes 1 8" square cake.
- 6 tbls. salted butter, soft
- 3/4 cup packed dark brown sugar
- 1 large egg, 1 large egg yolk
- 1 tsp. vanilla extract
- 3/4 cup masala chai mix, or a combination of this with buttermilk
- 1/4 tsp. baking soda
- 3/4 tsp. baking powder
- 1/4 tsp. cardamom
- 1/4 tsp. freshly ground black pepper
- 1/2 tsp. ground ginger
- 1/2 tsp. cinnamon
- 1/2 cup Dutch-process cocoa powder, sifted
1 cup all-purpose flour, sifted
Heat your oven to 350 degrees F, then butter an 8" baking pan and line the bottom with a square of parchment. Beat butter and sugar together until light and fluffy, then beat in the egg, yolk and vanilla until combined. Scrape down the bowl, then sprinkle the baking soda, powder, and ground spices over the top of the batter, and finally beat again until very well combined. Add the masala chai mix/buttermilk and mix to combine. The batter will likely curdle, but don't worry about it. Add the sifted cocoa and flour, and mix until just barely combined. Scrape the batter into your pan, and smooth the top. Bake for 20-25 minutes, until a toothpick inserted comes out clean. Let cool on a cooling rack for 10 minutes, then remove from the pan and flip right side up to cool completely before frosting.
